Breadcrumb Pasta

Description

A wonderful combination of pasta, crunchy breadcrumbs, and golden garlic. It's as aromatic as it is delicious!

Ingredients

  • 1⁄3 c olive oil
  • 2 c fresh breadcrumbs
  • 3 clv garlic, minced
  • 1 c fresh grated (not shredded) parmesan cheese
  • 1 pk spaghetti or angel hair
  • 1 tsp oregano
  • salt & pepper

Instructions

Pour olive oil in saute pan. Add fresh bread crumbs. Saute until they're golden brown and crunchy - around 5 minutes. Add minced garlic and oregano, saute on low a few minutes longer. Do not burn the garlic or cook until dark brown. Add salt & pepper to taste.

Meanwhile, cook pasta according to directions until al dente. Drain pasta. Put in serving dish, add breadcrumbs and cheese and toss until blended. Pour a small amount of olive oil over the top.

Serve with salad.

Notes

I like a little extra cheese served over the top of this as well. The breadcrumb mixture is so flavorful, you could also use it when baking fish or chicken, so make extra and set it aside.
