Mac 'n Cheese

Description
Homemade macaroni and cheese has no equal. This recipe has lots of depth to the flavors and the crunchy topping will have you craving mac 'n cheese on a regular basis!
Ingredients
- 1 lb package macaroni, shells, or spiral pasta
- 1⁄4 c (1/2 stick) butter
- 1 small onion, chopped
- 4 T flour
- 2 tsp salt
- 1 tsp dry mustard powder
- 1 tsp black pepper
- 4 c shredded cheeses (any combination of sharp cheddar, gruyere, parmesan is best), divided
- 4 c milk, divided
Instructions
Oven 375 degrees.
Cook pasta according to directions. Drain and set aside in bowl.
- While that is cooking, melt butter in saucepan on medium heat.
- Add chopped onions and saute until translucent (4-6 minutes).
- Combine flour with mustard, salt and pepper
- Add flour and cook for about 2 minutes, constantly stirring. The flour may turn a golden color, but do not let the flour get dark.
- Slowly pour 3 c. milk in, continuing to stir to break up flour.
- Sauce will thicken, but you do want it a bit on the thin side, since the cheese will thicken it more. Slowly add in extra cup of milk, a small amount at a time, until you feel it is a good consistency. It may not take the entire cup.
- Turn heat down and add 3 c. cheese, continuing to stir so sauce does not stick to bottom of pan.
- Pour sauce over pasta in bowl, mixing until well blended
- Pour into greased baking dish
- Sprinkle 1 c. cheese on top or breadcrumb topping below
- Bake 25-30 minutes, until bubbly and golden on top
Notes
I use a whisk when stirring the mixture over heat, to keep it smooth.
You can also make a crunchy breadcrumb topping:
2 c. breadcrumbs - dry or fresh
2 tablespoons melted butter
Combine until butter is mixed through thoroughly.
Add 1 cup grated cheese and mix well.
